Mini seitan roulades with green beans on fresh loose leaf lettuce with Tartex Vegetarian Pâté Green Pepper and Vegetarian Pâté Chives

Ingredients for 4 portions:

For the seitan

• 200 g Seitan-Fix
• 1½  tbsp cornflour
• 1 tsp salt
• ½ tsp ground black pepper
• 4 tbsp Tartex Vegetarian Pâté Green Pepper
• 1 tbsp tomato concentrate
• 250 ml hot water
• 2 tbsp red wine vinegar
• 1 tbsp soy sauce
• 200 g green beans
• 2 tbsp olive oil 

For the salad dressing

• 1 tbsp Tartex Vegetarian Pâté Chives
• 2 tbsp olive oil
• 1 tbsp white wine vinegar
• ½ tsp medium mustard
• a pinch of course sea salt 

To serve

• 400 g loose leaf lettuce
• 4 tbsp chives
• 2 tbsp medium mustard 


Mix together Seitan-Fix with cornflour, salt and pepper in a large bowl.

Using a whisk, stir 2 tbsp of Tartex Vegetarian Pâté Green Pepper and tomato concentrate into hot water until dissolved. Stir in red wine vinegar and soy sauce.

Add the liquid ingredients to the dry ingredients and mix together well, using a wooden spoon. Finally knead everything together by hand. Divide the dough into 4 parts and roll them out with a rolling pin into rectangles. Cut into twelve 5 x 15 cm strips and spread these with the remaining 2 tbsp of Tartex Vegetarian Pâté Green Pepper.

Wash the beans and roll up five beans in each strip of seitan dough. Place in a steamer basket and steam in a large saucepan of boiling water over a low heat for 20 minutes. Then remove from the basket and allow to cool for 20 minutes.

Add olive oil to a hot frying pan and fry the roulades for 4 minutes on all sides until golden brown. 

For the salad dressing, mix all ingredients together until well blended and toss with the lettuce. 

Arrange the roulades on top of the salad and serve with fresh chives and mustard.
